Pinot Meunier, mainly from the Marne Valley, gives this wine an appealing fruitiness and roundness. The origin of the cru's gives a good idea of the quality of the wine... Pinot Noir Ay, Mareuil sur Ay, Louvois, Bouzy, Tours sur Marne, Chigny les Roses, Rilly, Ecueil. Chardonnay Cramant, Chouilly, Cuis, Vertus. Pinot Meunier Venteuil, Cerseuil, St Martin d'Ablois, Chavot. These villages are ranked at the very high level of 94 to 95% on the echelle des crus scale. Ideal as an aperitif, Champagne Ayala Brut can also match a whole meal. It will pair perfectly with seafood, scallops, lobster, crab, fresh or grilled fish, fish terrines, salmon or beef carpaccio.
