The fruit for this Skillogalee Shiraz was handpicked from low yielding, unirrigated vines growing on the slopes around the homestead, around 450m above sea level. The fruit was destalked and partially crushed, fermented in open tanks with submersion boards to ensure the emersion of the skins for maximum colour and flavour extraction, and then gently basket pressed. Malo lactic fermentation took place partially in tank with completion in barrel. Maturation for 20 months in a combination of French and American oak hogsheads has added considerable balance and complexity. This wine has been bottled using a Stelvin Closure in order to maintain it's ripe fruit characteristics and guarantee it's quality when the bottle is opened. Limited stock.
