Each individual component of this blend Oloroso and Pedro Ximenez is aged in its own Solera. After blending, the wine is further aged for three years in a solera of 33 American oak casks before bottling. A dark mahogany colour with bronze hues. Concentrated aromas of ripe fruits, mocca, cocoa and toffee. Very complex on the palate, with a clean acidity and flavour of raisins, nuts, crystallized orange and candied peel. Food pairings Ideal with rich cakes, egg based puddings and blue cheeses Stilton, Gorgonzola. Also as an ideal digestif for the sweet toothed.
