LIndomptable de Cigalus Blanc 2014 PGI Aude Hautrive

Domaine de Cigalus was acquired by Gérard Bertrand in 1995, and is one of his most prized estates, farmed entirely using biodynamic methods. This unusual white blend is 70% oak fermented before reblending and ageing in oak for 6 8 months. Invitingly golden in colour, this is an intense and complex wine, full of grapefruit, white peach and honey aromas, with subtle hints of dried fruits and toast. Silky, ripe and involving. Superb accompaniment for a selection of ripe soft cheeses.
