After pressing, the must underwent two débourbages settlings, one immediately after and the second in tank at 6°C over 24 hours. Initial fermentation was slow and cool, with the temperature kept under 18°C and each grape variety and each village kept separate. Once blended, secondary fermentation took place in the bottle at 9°C in the deepest Pol Roger cellars.
