For this Merlot, Boutinot’s winemaker Marinda Kruger Van Eck sourced grapes from mature vines growing in the dense shale soils of the Malmesbury area. The vines have to struggle in this land, forcing their roots down to find the deep wet clay sub soil, thereby naturally restricting the yields of fruit, but producing grapes of excellent potential. The wine was fermented in open top tanks using a delicate pumping over technique to gently extract all the grapes’ character.
