A top notch example from a respected grower. Defaix Chablis displays minerally, flinty notes on the nose with touches of green apple. The palate is elegant, dry and characterised by crisp, citrus flavours overlaid with smoky notes. Long, complex finish. Perfect with appetizers and cold meat platters. Enjoy now or will cellar for 2 3 years. The wine is kept on its fine lees for 8 to 12 months. The lees are regularly moved around during the six first months to enrich the structure of the wine. The vinification is entirely done in stainless steel tanks to preserve the freshness and the typicity of the wine. Then the wine is bottled.
