The area has a unique soil profile – poor, well drained sandy clay loam over a solid limestone base – which is perfect for Shiraz. The grapes have to push their roots down deep to find water, forcing them into the limestone and so producing unusually small grapes with a high concentration of sugars and flavour compounds.
